When you walk into the Rosen Centre Hotel on International Drive, you come across what you would expect to find in any nice convention hotel. Expansive lobby, color-coordinated interiors, and a variety of dining outlets. Venture a little further down the hall and you'll find something completely unexpected: The Everglades Restaurant.

As the name suggests, The Everglades Restaurant pays homage to the vast expanse of threatened wetlands in south Florida. Both the interior design and menu reflect a respect for the native flora and fauna of the Everglades.

      This is no run-of-the-mill hotel restaurant. With meticulous care and planning, owner Harris Rosen, executives and chefs have created a unique dining experience that, for nine years, has been providing both visiting and local diners with creative, delicious fare.

      The Rosen Centre Hotel came into being in July, 2000 when it switched over from the Omni Rosen. The owner, Orlando Hotelier Harris Rosen, gave up his rights to the Omni franchise to create properties with his own personal mark. He currently owns and operates six hotels in the Orlando area and has a seventh property, Rosen Shingle Creek, that is now open. Rosen considers the Everglades to be his signature restaurant and took a very personal interest in developing its theme.

      It is important, that people realize that Everglades is a sophisticated restaurant, offering a fine dining experience that is one of a kind. We receive a lot of feedback from our guests as to how much they enjoyed the freshness, quality and blend of flavors in their meals. Additionally, we often hear about how well our service staff treated guests heightening their enjoyment and experience in Everglades.
