As the name suggests, The Everglades Restaurant pays homage to the vast expanse of threatened wetlands in South Florida. Green efforts and conservation are especially important to the Rosen Centre, a Two Palm Green Lodge — among the first hotels in Central Florida to receive this designation.
Immediately you know this is not a typical hotel restaurant. With meticulous care and planning, owner Harris Rosen, Executive Chef Michael Rumplik and Everglades Chef Fred Vlachos have created a unique dining experience that has been providing both visiting and local diners with creative, delicious fare for more than 15 years.
While the interior design reflects a respect for the native flora and fauna of the Everglades, the gourmet menu showcases an array of steak and seafood dishes that artfully blend Florida traditional flavors with more contemporary dishes. From Florida Rock Shrimp served with Roma tomatoes, shitake mushrooms and pesto to Filet Key Largo topped with jumbo lump crabmeat to the house specialty Alligator Bay Chowder, you will find a casual gourmet dining experience that is one of a kind.
Chef Rumplik and his culinary team are known for their creativity and were most recently acknowledged with Meetings & Conventions’ prestigious Gold Platter Award, given to select properties throughout the nation that demonstrate creative and culinary excellence. The hotel is also known for special dining experiences, such as the Vine and Dine wine pairing dinner series. The Vine and Dine dinner event offers an elegant evening of fine dining with a five-course menu featuring fresh, seasonal ingredients accompanied by wines from various wineries specifically chosen to complement the cuisine. Each Vine and Dine event includes an informational session with an experienced wine maker, sommelier or wine speaker.
